makes 2 servings | easy | time: 20 minutes
you know those summer days when it’s just too hot to cook, but you still want something that feels a little elevated? that’s exactly where this pistachio summer salad with peaches and hot honey comes in. it’s the kind of dish that feels like cheating—it’s ridiculously simple to throw together, but looks like something you’d get at a café that charges extra for oat milk. juicy peaches bring all the sunshine, the pistachios add that perfect nutty flavor, and the hot honey? game changer. it’s sweet, it’s spicy, it ties everything together without trying too hard.
this isn’t just a salad—it’s a vibe. it’s the thing you make when you’ve got friends coming over and a bottle of rosé chilling in the fridge. it works as a side, sure, but don’t be surprised if it steals the show. honestly, once you make it, you’ll start finding excuses to eat it all summer.
