PISTACHIO DATE CARAMEL APPLE
makes 1 "caramel" apple | easy | active time: 20 minutes | full time: 1.5 hours
the viral date caramel apple – tastes like a caramel apple, looks like a caramel apple, but its SO MUCH better for you! our version uses crunchy pistachio spread in the center of the apple, and then it gets coated in rich and silky milk chocolate. each bite is a slice of heaven! don't say i didn't warn you ;)
ingredients:
- 1 jar Pistakio Crunchy Pistachio Spread
- 1 bag Joolies Fresh Medjool Dates
- 1 apple, ours is honeycrisp – but whatever you've got will work fine!
- crushed pistachios, for topping
- optional: 1 popsicle stick (for that authentic caramel apple look!)

Start by prepping your dates — pit them, then line them up side by side on a sheet of plastic wrap.

Lay a piece of parchment paper over them and gently roll with a rolling pin until they’re as flat as you can get them. (Think of it like a sweet, sticky blanket for your apple!)

Remove the parchment and place your apple right in the center. Use the plastic wrap to help you wrap the dates tightly around the apple, pressing with your hands until it’s fully covered and smooth. Stick a popsicle stick into the top and set it aside.

Spoon or drizzle crunchy pistachio spread all over the date-covered apple, letting it coat evenly. Use a wirerack to let it drip off, if desired. Set this in the fridge for 15 minutes.

While the pistachio spread sets, melt your chocolate. Coat the apple in the milk chocolate (you can do this over the wirerack or use a big bowl to dip the apple. Sprinkle crushed pistachios over the top before it sets!

Place the caramel apple in the fridge to set (approx. 1 hour). Finally, slice it up and enjoy a delicious, better-for-you caramel apple!
