Chocolate Pistachio Frozen Banana Pops, Vegan Dessert, Gluten Free, Frozen Treat, Sweet and Salty, No Bake

PISTACHIO BANANA POPS

summer dessert energy in 4 bites — bananas dunked in creamy Pistakio, rolled in crunchy pistachios, then locked in with a snappy chocolate shell and a hit of flaky sea salt. sweet, salty, creamy, crunchy — and quietly vegan, dairy-free, and gluten-free.

ingredients:


  • 2 bananas, not too ripe!
  • 3/4 cup Pistakio Creamy pistachio spread (crunchy works too)
  • 1 tbsp melted coconut oil
  • 3/4 cup pistachios, chopped or crushed
  • 1 cup chocolate chips or chopped chocolate (use high quality!)
  • 2 tsp melted coconut oil (optional, for a smoother chocolate shell)
  • 1/2 tsp flaky sea salt



instructions:


  1. peel the bananas and cut each one in half so you have 4 pieces total. insert small sticks or skewers if you want easier dipping.
  2. mix the pistakio spread with 1 tbsp melted coconut oil until smooth.
  3. dip each banana half fully into the pistakio mixture, letting excess drip off.
  4. roll each coated banana half in the crushed pistachios until well covered.
  5. place the coated banana halves on a parchment-lined tray and freeze for 1 hour, or until firm.
  6. melt the chocolate with the optional 2 tsp coconut oil if you want a thinner, snappier shell.
  7. dip each frozen banana half into the melted chocolate, coating completely.
  8. sprinkle each piece with flaky sea salt.
  9. freeze again for 30-45 minutes, until the chocolate shell is fully set.
  10. devour immediately, or store the finished pops in an airtight container in the freezer
