PISTACHIO BEET-RELISH BRATWURST

ingredients:
- 1 Bratwurst from Lottie's Meats
- 1/2 cup pickled beets & onions mixture
- 1/3 cup (80g) white vinegar
- 2 tbsp (25g) granulated sugar
- 2/3 (158g) cup water
- large pinch of salt (5g)
- 1 tbsp (20g) mustard seeds

OG pistachio spread
- sprig of dill for garnish
- 1 brioche bun
instructions:
- make your pickled beets and onion mixture with ⅓ cup white vinegar, 2 tbsp sugar, ⅔ cup water & a pinch of salt while prepping other ingredients.
- heat a skillet to medium high and sear your bratwurst as instructed on package.
- toast your brioche bun and assemble your sausage, then top with your beet + onion mixture and a drizzle of pistachio spread. garnish with dill and enjoy!
