CHEESE AND PISTACHIO STUFFED OLIVES

ingredients:

1 standard jar large green olives, pitted

2 oz mozzarella cheese, cut into small pieces to fit inside the olive

2/3 tbsp Pistakio OG Creamy pistachio spread

1/2 cup flour + pinch of salt

2 egg whites, beaten

1 cup breadcrumbs

2 tbsp pistachio flour (just pistachios pulsed a few times)
instructions:

start by patting your olives dry, slicing your cheese, and filling a bag with pistakio (to pipe).

try to pipe along the sides of the olive to distribute pistakio throughout.

then stuff with a piece of mozzarella, leaving a little popping out. this gets so crispy and delish in the airfryer!

preheat your airfryer to 400ºF for 4-5 minutes.

set your stuffed olives to the side while you prep your breading station. In three separate bowls add your beaten egg whites, flour, and breadcrumbs.

drop your olive into the flour first, shaking off the excess, then dip in the egg whites, and lastly the breadcrumbs pressing lightly to adhere.
place your breaded olives into your preheated airfryer basket and lightly spray with avocado oil. -
airfry for 8-10 mins until golden and crispy.
