these donuts are everything you want in a dessert: perfectly fried (or air-fried if you're feeling virtuous), rolled in sugar for that satisfying crunch, and stuffed with a silky pistachio filling that oozes out with every bite. they're indulgent, fun to make, and even more fun to eat. whether you're whipping these up for a weekend brunch or just treating yourself to something special, they'll have everyone thinking you're a total pro in the kitchen.

ingredients:


  • 1 cup non dairy milk
  • 1 packet instant yeast
  • 1/3 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 4 tbsp vegan butter, at room temperature
  • 1 tsp vanilla extract
  • 4 cups all purpose flour
  • 1/2 cup granulated sugar
  • Pistakio Creamy Pistachio Spread



instructions:


  1. warm the milk in the microwave until 100°F. add yeast and coconut sugar, stir lightly, and cover for 10 minutes.
  2. add yeast mixture, applesauce, vegan butter, vanilla, and 2 cups of flour to stand mixer. mix on low speed using dough hook. gradually add 2 more cups of flour until dough forms.
  3. grease a bowl and place the dough inside. cover and let rise in a warm place for 30 minutes.
  4. after 30 minutes, section the dough out on a floured surface into 6-10 sections. roll each section of dough into a flattened ball until there are no creases.
  5. place each ball on a parchment-lined baking sheet, cover, and let rest for 15 minutes while heating oil.
  6. heat 2 inches of oil in a pot to 375℉. fry donuts for 2 minutes on the first side and 1 minute on the other side until golden. place on a cooling rack. (air fryer alternative - cook on 350 for 5 minutes on both sides)
  7. roll donuts in granulated sugar. cut a slit in each donut and pipe pistachio spread into the center using a piping bag. enjoy!
