WHIPPED MASCARPONE TOAST
makes 2-4 servings | easy | total time: 15 minutes
a crispy slice of toasted bread piled high with fluffy whipped mascarpone (or ricotta, if that’s what you’ve got) topped with a generous drizzle of Creamy or Crunchy Pistachio Spread, and a handful of juicy raspberries on top. we call this one the perfect anytime bite: creamy, nutty, fresh, and just sweet enough.
make it for breakfast, a mid-day treat, or whenever you want something that looks fancy but takes less than 15 minutes.
ingredients:
- 2 slices sourdough, toasted
- ½ cup (4 ounces) mascarpone
- ½ cup plus 2 tablespoons cold heavy cream
- 1 pinch salt
- Berries of your choice, sliced
- Pistakio Crunchy Pistachio Spread or Creamy Pistachio Spread
instructions:

in a medium bowl (or stand mixer bowl with the whisk attachment), add the mascarpone, heavy cream, and salt.

using a handheld mixer or stand mixer, whip on high until soft peaks form.

transfer to a piping bag or a ziplock bag and pipe the whipped mascarpone atop the toasted sourdough.

top with the berries and a hefty drizzle of Crunchy or Creamy Pistachio Spread!
