WATERLEMON SORBET WITH PISTAKIO DRIZZLE

bright, juicy, and just the right amount of unexpected—this "waterlemon" sorbet brings together the best of summer in one refreshing bowl. made with watermelon, lime, and a touch of zest, it's bold and cooling with no dairy or fuss. the real twist? a drizzle of Creamy Pistachio Spread over the top that adds richness, nuttiness, and just enough contrast to make every bite feel elevated. it's sweet, tart, and totally addictive. whether you're serving guests or keeping it all to yourself, this is your new go-to hot weather dessert.

ingredients:

  • 4 cups (570g) watermelon, cubed and seeds removed
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (119g) water
  • 1/4 cup (59g or 2-3 limes) fresh lime juice
  • 1 teaspoon (5g) lime zest
  • 3 tbsp (42g) of Creamy pistachio spread

instructions:

  1. place the cubed watermelon in a blender or food processor and blend until smooth.
  2. add the water, sugar, fresh lime juice, lime zest, and a pinch of salt to the watermelon puree. blend until well combined.
  3. pour the mixture into a shallow dish and place it in the freezer. refrigerate the mixture for at least 2 hours, or overnight.
  4. scoop the watermelon lime sorbet into a bowl and top it with pistachio spread, blueberries, and a sprig of mint for garnish. enjoy!
