PISTACHIO TIRAMISU ICE CREAM BARS

the only thing better than a classic tiramisu? a pistachio tiramisu. now imagine that, but turn it into the next best thing in life – ice cream sandwiches. meet our pistachio tiramisu ice cream bars – made easy with a no-churn pistachio mascarpone ice cream base that's delicious straight from the freezer, but stack some coffee soaked ladyfingers on top and you've got yourself the dessert every dessert wishes it could be.
ingredients:
- 3/4 cup (171g~) coffee
- 24 ladyfingers
- 1 1/4 cups (310g) heavy cream
- 1 tsp vanilla extract (or 1/4 tsp vanilla bean)
- 3/4 cup (245g) sweetened condensed milk

1 cup (250g) mascarpone
- 1/4 cup very finely chopped or ground pistachios, optional, for dusting
- 1/2 cup (140g) Pistakio Creamy Pistachio Spread
instructions:

line a 9x7 baking tray or dish with parchment paper. leave some overhang so you can easily lift the ice cream sandwiches out of the dish once they’re ready.

brew coffee, pour into a shallow dish for easy dipping, and then let it cool completely.

in a large bowl (or stand mixer), add cold heavy cream and vanilla extract. whip the cream until it becomes thick and has soft peaks – about 1-2 minutes. add the sweetened condensed milk to the bowl, then whip until combined. add the mascarpone and Creamy Pistachio Spread to the whipped cream mixture and whip until very thick and fluffy; it should have medium peaks. set in the fridge while preparing your assembly station.

quickly dip ladyfingers into the cooled coffee and arrange half of them in a single layer in the bottom of your prepared dish. don’t let them soak in the coffee for too long!

add all of the mascarpone ice cream on top of the ladyfingers and use an offset spatula to spread it out into an even layer. add the rest of the coffee-soaked ladyfingers on top of the ice cream layer.

cover the dish with plastic wrap and then freeze overnight.

the next day, dust the top with finely chopped or ground pistachios. leave them out for about ten minutes to slightly soften for easy slicing. lift them out of the dish, slice them up, and enjoy!
