PISTACHIO STUFFED PANCAKES

imagine layers of fluffy, golden pancakes generously filled with creamy pistachio spread. this recipe turns a classic breakfast into an indulgent, nutty delight. each bite delivers the light, airy texture of pancakes combined with the rich, smooth flavor of pistachio, reminiscent of a decadent pistachio gelato. perfect for a special weekend brunch or an elevated everyday breakfast, these pistachio stuffed pancakes are surprisingly simple to make and guaranteed to impress anyone lucky enough to try them.

ingredients:

 

  • 1 ½ cups (188g) all purpose flour
  • 2 tbsp (25g) sugar
  • 1 tbsp (9g) baking powder
  • pinch of salt (2g)
  • 1 ½ cups (374g) milk
  • 3 tbsp (42g) melted butter
  • 2 eggs
  • 1/3 cup (75g) Pistakio 

    Creamy pistachio spread

  

 

instructions:
 
  1. mix together milk, butter, sugar, and eggs in a bowl. add in your flour, baking powder and salt. gently mix until just combined. 
  2. butter a pan on medium heat and spoon 3/4 cups of batter in the pan. once the top of the pancake starts to bubble, flip and let cook for 2-3 more minutes.
  3. alternatively, place 3/4 cups of batter in a ramekin and bake in the oven on 350°F for 6-8 minutes.
  4. repeat the process 3-4 times.
  5. layer pancakes and lather with pistachio spread between each layer.
  6. enjoy!!
