PISTACHIO CROISSANT ICE CREAM SANDWICHES

there’s something about a flaky, buttery croissant paired with cold scoops of ice cream that just works—especially when there’s pistachio involved. this is a not-too-sweet, perfectly indulgent summer treat that feels just the right amount of fancy, but is secretly so easy to make.
we’re layering the inside of each croissant with our Crunchy Pistachio Spread (hello texture), adding a generous scoop of Trujoy’s vanilla or tart ice cream, and topping it off with a swirl of creamy pistachio spread and a handful of crushed pistachios. the combo of cold, creamy, buttery, and crunchy is just… unreal.
ingredients for 1 sandwich:

1 fresh croissant (reheat if needed)

2-3 scoops Trujoy frozen yogurt (vanilla or tart)

2-3 tbsp Pistakio Crunchy Pistachio Spread

1-2 tbsp of Pistakio Creamy Pistachio Spread

crushed pistachios (for topping)
instructions:

slice your croissant in half lengthwise, leaving a little hinge so it stays connected.

spread a generous layer of Pistakio Crunchy Pistachio Spread on the inside.

place 2-3 scoops of Trujoy frozen yogurt into the center and gently close the croissant over them.

drizzle the top with Pistakio Creamy Pistachio Spread and finish with a handful of crushed pistachios.

serve immediately for a soft, melty bite—or pop it in the freezer for 10–15 minutes if you want a firmer texture.
