instructions:

 

  • in a large bowl, mix together oats, flax seeds, and pistachio spread until a dough forms.
  • using one hand, form miniature ping pong sized balls (if they aren't holding up together, add more pistachio spread or coconut oil as needed).
  • set balls in the fridge for 1-2 hours.
  • after an hour, melt the dark chocolate in a small bowl and dip the oat balls into the chocolate using a fork or spoon.
  • place the chocolate balls on a tray with parchment paper and top with crushed pistachios while melty. 
  • set in the fridge for another 1-2 hours and enjoy!!!!
