CHOCOLATE COVERED PISTACHIO OAT BALLS

soft, chocolatey, and a little nutty—these pistachio oat balls are everything you want in a quick homemade treat. made with rolled oats, flax, and Creamy Pistachio Spread, then dipped in dark chocolate and topped with crushed pistachios, they’re equal parts satisfying and simple. no oven needed, just mix, roll, chill, and enjoy. perfect for sweet snacking without the sugar overload.

instructions:

 

  1. in a large bowl, mix together oats, flax seeds, and pistachio spread until a dough forms.

  2. using one hand, form miniature ping pong sized balls (if they aren't holding up together, add more pistachio spread or coconut oil as needed).

  3. set balls in the fridge for 1-2 hours.

  4. after an hour, melt the dark chocolate in a small bowl and dip the oat balls into the chocolate using a fork or spoon.

  5. place the chocolate balls on a tray with parchment paper and top with crushed pistachios while melty. 

  6. set in the fridge for another 1-2 hours and enjoy!!!!
