ITALIAN PEAR PISTACHIO CAKE

4 tbsp vegan butter, melted

1/4 cup granulated sugar

1/2 cup coconut sugar

2/3 cup cinnamon applesauce

1 tsp vanilla extract

1/2 cup dairy free milk

1 ½ cups all-purpose flour,

½ cup almond flour
-
1 tsp baking powder
-
1/3 cup Pistakio
OG pistachio spread
-
1 tsp cinnamon
-
3 thinly sliced Bosc pears
-
Powdered sugar (optional)
instructions:
- preheat your oven to 350°F.
- in a medium bowl, whisk together the vegan butter and sugar until smooth. stir in the applesauce, vanilla extract, and dairy-free milk until well combined.
- in a separate bowl, combine the all-purpose flour, almond flour, baking powder, and cinnamon. mix to evenly distribute, then gradually fold the dry ingredients into the wet mixture.
- add the pistachio spread and mix thoroughly until the batter is smooth.
- pour the batter into an 8in. round cake pan, spreading it evenly. arrange a single layer of sliced pears on top.
- bake for 50 minutes. once baked, dust with powdered sugar and enjoy!
